For the most part, I try to eat healthy & homecooked meals. But let’s be honest, that can get a little boring sometimes, and it’s easy to start craving fast food. To avoid caving to craving, I like to recreate healthier versions of my favorite take out.

Today, I’m making burrito bowls, made popular by chains like Chipotle, Qdoba, and Freebirds. The wonderful thing about this recipe is that you can design it to your liking and use any combination of toppings you want, but here is my suggested healthy option to create your own “homemade Chipotle.”



  • Grilled Chicken, finely diced
  • Red Bell Pepper
  • Red Onion
  • Spanish Rice
  • Black Beans
  • Guacamole
  • Hot Sauce (I use Yellowbird sauces, made in Austin, TX)
  • Chips



You will need to prepare the chicken, red pepper and onion, spanish rice, and beans simultaneously.

Prepare 4 chicken breasts to grill by lightly covering in olive oil, salt, and Mexican blend seasoning. Grill on each side for 5 minutes, or until fully cooked.

Cut bell pepper and onion into large chunks (like you would for fajitas). Cook covered over medium heat in a nonstick skillet until softened.

Heat black beans on stove; add cumin, cayenne, and garlic powder if desired.

For spanish rice, bring 2 cups of chicken bone broth to a boil. Add 1 cup of dry brown rice, ¼ cup red salsa, and cumin, cayenne, and garlic powder to taste. Reduce heat to a simmer and cover. Cook for approximately 35-40 minutes. Once rice is cooked, stir until well mixed.

Once all toppings are finished, it’s time to create your bowl! I like to build it as follows: Scoop of rice, scoop of black beans, red pepper and onion, grilled chicken, hot sauce, guacamole. Serve with chips on the side if desired.
